Description
Shiro-an (白あん / 춘설 백앙금) is a traditional sweetened white bean paste widely used in Japanese wagashi and Korean desserts. Made from carefully cooked and mashed white kidney beans (such as Otebo beans), it has a light colour and mild flavour, making it a versatile base for both sweet and decorative applications.
Unlike red bean paste (anko), Shiro-an allows other flavours — such as matcha, yuzu, or fruit purées — to shine when blended. Its neutral tone also makes it the ideal choice for bean paste flower piping, nerikiri, and other intricate confectionery work.

Storage Instructions:
